Merriman’s Restaurant is the flagship eatery of acclaimed Chef Peter Merriman, a pioneer of Hawaiʻi Regional Cuisine. The client sought an edible-landscape design for an existing garden and courtyard space outside the restaurant that supplied fresh fruit, herbs, and other crops for the menu. The design improved the space on a practical level with pathways, seating areas, and pollinator friendly plantings. The design also integrated carbon off-setting materials into the garden’s softscape and hardscape.
